Sage blossom honey is a pure, delicate varietal honey derived exclusively from the nectar of various wild sage flowers (Salvia species), such as Black Sage or White Sage. Like all true varietals, its composition comes from the blossoms, not the leaves used for culinary seasoning.

 

Sage honey is highly prized in the beekeeping community because it possesses a unique combination of mild flavor and a very slow rate of crystallization.

 

 Color and Texture: It is typically a light, clear, or golden amber color and has a heavy, thick body. Its high fructose content causes it to be extremely slow to granulate (or "candy"), making it a favorite for blending and long-term storage.

 Flavor Profile: The taste is mild, sweet, and clean, often described as having subtle, pleasant floral notes without the strong, herbal taste of the sage seasoning. It is one of the lightest-flavored honeys available.

 Source: Primarily harvested in the dry, rocky terrains of Southern California and the Mediterranean region (like Greece). The production of sage honey relies heavily on ideal weather conditions—timely rains followed by dry spells—making a good harvest relatively rare in some years.

 

Because of its gentle sweetness, it is highly versatile and is a preferred choice when the strong flavor of other honeys is not desired.
